Where does whiskey get that beautiful copper color? The answer is simple but the process is long. Colorless liquor is stored in charred oak barrels for a bulk of the year to draw out sugars within the wood; giving whiskey it’s distinct color and flavor. In same way, we’ve taken that process and applied it to our honey. We start out with the mildest flavor and lightest color honey harvested from a local apiary. Then we pour into a freshly emptied whiskey barrel from a local distillery. Then ingredient is patience. In the span of a year, rotating the barrel on a weekly basis, we wait for the flavor of the wood to incorporate into our honey. The final product has a subtle tone that comes only with age. In human history, this time proven practice has been applied to improve wine, beer, and even coffee.
